Yogurt Berry Parfait with Cacao Crumble

I originally created this recipe by accident when making my Layered Berry Parfait but it quickly became one of my favourite treats to make. The coconut yogurt soaks into the rich cacao crumble while the berries add a tangy touch. The flavour combination is to die for.

Ingredients

  • 1 tub coconut yogurt

  • 1/2 cup rolled oats, ground

  • 2 tbs cacao powder

  • 1 tbs maple syrup

  • 500g frozen berries

  • 2 tbs chia seeds

To make the berry chia jam, add the frozen berries to a pot and cook on medium-low heat until the berries break down. Remove from heat and stir in the chia seeds. Allow to cool.

In a food processor or by hand, mix together the oats, cacao powder and maple syrup. If the mixture is too dry add a dash of hot water until it binds together.

Once the berry chia jam is cool, layer together the crumble, followed by the jam and the coconut yogurt in a short glass. Repeat until full.

When ready to serve, top with edible flowers and enjoy!

Parfait can be eaten immediately but it does taste better when refrigerated overnight!
