Edamame Brown Rice Salad

Warm salads are my go-to during the summer months. They’re light, refreshing and take only a short time to prepare. My Edamame Brown Rice Salad is loaded with protein, fibre & essential nutrients to keep your body happy.

Ingredients

  • 1 cup brown rice or Gut-Friendly Mixed Grains, cooked

  • 1/4 cup lentils, cooked

  • 1 cup edamame

  • 1 tomato, chopped

  • 1 thin green capsicum, chopped

  • Handful baby spinach

  • Handful chopped parsley

Tahini Dressing

  • 1 tbs tahini

  • Squeeze of a lemon

  • Pinch of garlic powder

Cook the brown rice and lentils according to package instructions. Allow to cool slightly and then toss together all the salad ingredients in a mixing bowl.

To make the tahini dressing, combine all the dressing ingredients together while slowly adding cold water until desired consistency is formed.

Transfer the salad to a serving plate and top with tahini dressing. Can be served warm or cold.

Keeps in the fridge for up to 3 days.
