Warm Spring Salad

Spring is the season of fresh, warm salads. When you don’t want to spend hours in the kitchen over a hot stove, this salad is the way to go. It’s packed full of protein and essential nutrients to keep you feeling light and healthy.

Ingredients

  • 1 cup brussel sprouts

  • 2 cups fresh spinach

  • 1/2 cup chickpeas

  • 1/2 tbs curry powder

  • 1 cup cooked mixed grains, or grain of choice

  • 1 tsp american mustard

  • 1 tsp mustard seeds

  • 1/2 tsp honey or maple syrup

  • Optional: 1/2 ripe avocado

Method

Add the brussel sprouts to a small pan with a dash of water and steam on low-med heat until tender. While the brussel sprouts are cooking, season the chickpeas with curry powder and bake or air-fry for 5-10 mins or until crispy.

Add the spinach leaves to a large plate, followed by the cooked grains, brussel sprouts and chickpeas. Dice the avocado and mix through if using.

To make the dressing, whisk together the mustard, mustard seeds, honey or syrup and dilute with a small amount of water until you reach your desired consistency.

Pour over the salad and enjoy!
