The Best Vegan Nachos
That’s right. I’m claiming it. These are the best vegan nachos you’ll ever make and are sure to impress even the most stubborn meat-eaters in your life. The tempeh is an amazing alternative to mince meat and is so so tasty. Don’t take my word for it, try it for yourself!
Ingredients
1 packet corn chips
1 package tempeh, shredded
1 can lentils, drained and rinsed
1 can black beans, drained and rinsed
1 jar salsa
1 tomato, diced
1 avocado, diced
1 capsicum, diced
1 red onion, diced
Handful fresh coriander
Sour cream
1 cup raw cashews
Juice of 1 lemon
1 tsp nutritional yeast
1/2-1 cup water
Method
In a pan, add the tempeh, lentils, black beans and salsa and cook on medium-low heat. Spread the corn chips over a plate and spoon over the tempeh mixture followed by the remaining ingredients.
To make the sour cream, add all the ingredients except the water to a high speed blender. Slowly pour the water in while blending until your desired consistency is achieved.
Spread the sour cream over the nachos and enjoy!
