Oven-Roasted Cauliflower
My oven-roasted cauliflower is packed full of flavour and easy to make. Doused in middle-eastern style spices, making it rich in vitamins and gut-loving fibre. It’s the perfect main dish or dinner party appetiser.
Ingredients
1 whole cauliflower
2 tbs tahini
1/2 tsp chili flakes
1/2 tsp smoked paprika
1 tsp sumac
2 tsp garlic powder
1/4 tsp turmeric
Pinch of black pepper
Juice of 1 lemon
1/4 cup cold water
Clean the cauliflower of its leaves and stem and place whole in a baking dish.
In a small mixing bowl, combine all the spices with the tahini and lemon. Slowly mix through the water until a creamy paste forms. You may need to add more or less water to get the desired consistency.
Pour half the mixture over the cauliflower, making sure the entire surface of the cauliflower is covered.
Optional: refrigerate the cauliflower overnight to allow the marinade to set. If you decide not to refrigerate, pour the rest of the marinade over the cauliflower.
Roast in the oven at 200 degrees C for 45 mins or until the cauliflower is fully cooked through.
Serve with a drizzle of tahini and top with fresh parsley and enjoy!
