Loaded BBQ Jackfruit Pizza
Eating healthy doesn’t mean you have to give up your favourite foods. This BBQ jackfruit pizza is a tasty alternative to your fav takeout pizza and will leave you feeling light yet oh so satisfied.
Ingredients
Dough
2 cups wholewheat flour
1 tsp dry yeast
1 cup warm water
Topping
1 can jackfruit, rinsed and drained
1/2 cup + 1 tbs bbq sauce
1/2 tsp smoked paprika
Handful spinach
1 white onion, sliced
1 cup mushrooms, sliced
1 capsicum, chopped
Handful cherry tomatoes
1 can pineapple pieces, drained
Optional topping: vegan sour cream
Method
Preheat oven to 200 degrees C.
In a large bowl, mix together the flour, yeast and water and knead until a dough forms. Cover and let rest for 10 minutes. While the dough rests, chop up the jackfruit into chunks and mix with 1/2 cup bbq sauce and smoked paprika. Prep all other ingredients.
Once the dough has rested, roll it out into a pizza base and transfer to a lined baking tray. Spread the remainder of the bbq sauce over the base, followed by the jackfruit and the rest of the toppings. Bake for 15-20 minutes or until the dough is fully cooked.
Slice into even pieces and top with vegan sour cream if desired.
