Fig & Walnut Banana Bread

Anyone who knows me well knows I’m obsessed with figs so it only made sense to make a delicious fig & walnut banana bread.

In all honesty, I’ve banned myself from making this again because I ate the whole loaf in a day. My excuse was it’s super healthy but still, you don’t want to be eating a whole loaf of bread in a day.

Anyway, enough about my monster appetite, here’s the recipe for my mouth-watering, naturally-sweet banana bread made with the sweet nectar of the gods - figs!

Ingredients

  • 3 ripe bananas, mashed

  • 1 tbs flaxseed, ground

  • 1 tsp vanilla extract

  • 1/2 tbs cinnamon

  • 2 cups wholewheat flour

  • 1 tsp baking soda

  • 1 cup dried figs, chopped

  • 1/2 cup walnuts, chopped

Method

Preheat the oven to 180 degrees C.

To the mashed bananas, add the flaxseed, vanilla and cinnamon and mix until smooth. Add in the flour and baking soda and mix until well combined. Throw in the figs and walnuts and mix once more.

Transfer the mixture into a baking tray and bake for 30 minutes or until a skewer comes out clean when inserted.

Allow the bread to cool before slicing and enjoy!
