Green Curry Risotto
My green curry risotto is an incredibly healthy meal that takes no time to make. It’s light yet filling and packed with a whole host of vitamins, minerals & nutrients.
Ingredients
6 cups stir fry veg
2 cups Gut-Friendly Mixed Grains, cooked
2 tbs green curry paste
1/4 cup (100mL) coconut milk
Steam the veg in a large pan until tender, gradually adding water if the pan gets too dry.
Add the green curry paste and coconut milk. Stir through the cooked mixed grains until well combined.
Serve & enjoy!
