Blueberry Breakfast Bites

My blueberry breakfast bites are a quick and easy option for when you’re running short on time. Perfect for on-the-go or as cute little additions to your kids lunchboxes.

Ingredients

  • 1 banana, ripe

  • 1/4 cup rolled oats

  • 1/4 cup quinoa flakes

  • Cinnamon, to taste

  • 1/4 tsp vanilla extract

  • 1/2 cup blueberries, fresh or frozen

In a small mixing bowl, mash the banana and add the cinnamon and vanilla extract. Fold in the oats and quinoa, followed by the blueberries.

In the palm of your hands, form the mixture into mini cookies and transfer onto a lined baking sheet. Bake for 10-15 mins on 220 degrees C. Alternatively, you can air-fry the bites for 6 minutes.
