Barley & Vegetable Soup

The perfect autumn soup for you and the family to keep bodies warm and nourished and tastebuds satisfied.

Ingredients

  • 1 onion, diced

  • 2-4 gloves garlic, minced

  • 1 cup carrots, diced

  • 1 cup celery, diced

  • 2-3 cups kale, chopped

  • 1/2 cup dry barley

  • 1/2 cup dry French lentils

  • 1-2 tsp chilli flakes

  • 1/2 tsp black pepper

  • 1 tsp smoked or sweet paprika

  • Salt, to taste

Add the onion, garlic, black pepper, paprika and chilli flakes to a large pot and cook on the stove top at high heat until the onions become translucent.

Throw in the carrots, kale and celery and stir.

Rinse and drain the barley and lentils and add to pot along with 4-6 cups of water.

Simmer on low-medium heat for 45 minutes or until the lentils are fully cooked.

When serving, sprinkle with iodised or sea salt and enjoy!
