Tofu & Veggie Skewers
When you’re short on time and in the mood for a light meal loaded with gut-loving micronutrients, these tofu & veggie skewers are the way to go.
Ingredients
2 large red capsicum
2 zucchini
400g firm tofu
1-2 tsp sumac
Lemon pepper seasoning, to taste
Bamboo skewers
Soak the bamboo skewers into a tub of water and set aside.
Cut the capsicum, zucchini and tofu into bite-sized pieces. Add the tofu to a bowl and cover with the sumac and lemon pepper seasoning. You can add a squeeze of lemon for extra flavour.
Remove the bamboo skewers from the water and pat dry. Slide the veg and tofu onto the skewers and place on a lined baking tray.
Bake at 200 degrees C for 20 minutes or until the tofu is crisp.
Serve on a bed of greens with your choice of dressing. Enjoy!
