Oven-Baked Falafel

Falafel is by far one of my favourite foods. They’re full of protein, fibre and micronutrients making them a staple in any plant-based kitchen.

My oven-baked falafel cuts out the refined carbs and saturated fats so you can enjoy them guilt-free.

Ingredients

  • 2 cups cooked chickpeas

  • 1/2 cup fresh coriander

  • 1/2 cup fresh parsley

  • 1 brown onion

  • 2 cloves garlic

  • 1/2 tsp cumin

  • Sea salt, to taste

Throw all the ingredients in a food processor and blend until smooth with some chunks.

In the palm of your hands, roll the mixture into bite-sized balls. Place on a lined baking sheet and bake at 220 degrees C for 20-30 minutes.

Serve with a fresh salad and dip or with pita bread. Enjoy!
