Healthy Mexican Pizza

Your new summer go-to. My Mexican pizza is light, fresh and super tasty. It’s packed full of micronutrients and makes the perfect meal when entertaining or dining in alone.

Ingredients

  • Corn tortillas

  • 1 can shredded jackfruit, drained and rinsed

  • 1 can mixed beans, drained and rinsed

  • 1 cup salsa

  • 1/2 cup capsicum, diced

  • 1/2 cup mushrooms, sliced

  • 1/2 cup zucchini, sliced

  • Avocado, diced

  • Tomato, diced

  • Fresh coriander, chopped

  • Lemon, to taste

Place the corn tortillas on a lined baking sheet.

In a small mixing bowl, add the jackfruit, beans and salsa. Mix well. Smudge a thin layer over the corn tortillas and top with the capsicum, mushrooms and zucchini.

Bake for 15-20 minutes. Top with avocado, tomato, coriander and lemon. Enjoy!
