Choc-Cherry Banana Bread

This recipe was inspired by a cute little beach-side cafe. They had slices of rich chocolate banana bread that caught my eye but I decided against ordering a piece because health. Little did I know I would be dreaming about it for days on end. So, naturally I made my own and I’m convinced it tastes just as good and has the added benefit of health!

Ingredients

  • 3 ripe bananas

  • 1 tbs ground flaxseed

  • 3 tbs cacao powder

  • 2 cups spelt flour

  • 1 tsp baking powder

  • 1/2 cup almond milk

  • 1/4 cup choc chips

  • 1/4 cup pitted cherries

Method

Preheat oven to 180 degrees C.

In a large bowl, mash the bananas until smooth. Fold in the flaxseed and cacao powder until well combined.

Throw in the spelt flour and baking powder and mix well. Slowly add in the almond milk until a cake batter consistency forms.

Fold in the choc chips and pitted cherries and then transfer the mixture to a lined loaf tin.

Bake for 35 mins or until a skewer comes out clean when inserted into the centre of the bread.
