Cauliflower & Chickpea Curry

My Cauliflower & Chickpea Curry is a healthy week night dinner that takes no time to make. It’s packed full of flavour, fibre and nutrients, making it a staple the whole family will love.

Ingredients

  • 1 onion, diced

  • 4 cloves garlic, crushed

  • 1 thumb-sized piece of ginger, grated

  • 1 tbs olive oil

  • 2 tsp turmeric powder

  • 1/2 tsp black pepper

  • 1/2 tsp iodised salt

  • 2 tsp chilli flakes

  • 2 tbs curry powder

  • 3 tbs tomato paste

  • 1/2 cup dried red lentils

  • 4 cups cauliflower florets

  • Handful of spinach

  • 1 can chickpeas, rinsed and drained

  • 1 can coconut milk

In your French oven, cook the onion, garlic, ginger and chilli flakes in the oil and a dash of water until the onion becomes translucent. Turn the heat down to low and add the rest of the spices.

Add the tomato paste with another dash of water and mix well. Throw in the cauliflower, red lentils, and spinach, along with 6 cups of water. Allow to simmer until the lentils are fully cooked. You may need to add more water as it’s cooking.

Throw in the chickpeas and coconut milk and allow to simmer on low for another 2 mins.

Remove from heat and serve!
