Caramelised Banana Oatmeal with Strawberry Puree

Who says breakfast can’t taste like dessert? My Caramelised Banana Oatmeal is the perfect breakfast year-round. It’s sweet, silky and, best of all - healthy!

Ingredients

  • 1/2 cup rolled oats

  • 1 cup plant milk or water

  • 1 ripe banana

  • 1 cup strawberries, fresh or frozen

  • 1 tbs coconut yogurt

  • 1 tbs pecans or walnuts, crushed

  • 1 tbs maple syrup

  • Cinnamon powder, to taste

To a small non-stick pot, combine the oats and plant milk or water and cook on low-medium heat until the oats have broken down into a creamy texture. You may need to add more milk or water to achieve your desired consistency.

Slice the banana length-ways and add to a non-stick pan, followed by maple syrup and a splash of water. Sprinkle cinnamon on the banana and fry on medium heat for 2-3 mins, ensuring to flip the banana half way. Once soft and gooey, remove from heat and set aside.

In the same pan, add the strawberries and cook on medium heat until they break down. Remove from heat.

To the bowl of oatmeal, add the strawberry puree, caramelised bananas and top with the coconut yogurt and crushed nuts. You can also add a dash of maple syrup if desired.

Serve immediately. Enjoy!
