Lemon Poppyseed Doughnuts
Baked to perfection and soft and fluffy on the inside, my Lemon Poppyseed Doughnuts are a healthy baked treat you can enjoy all week long.
The recipe makes 18 doughnuts, so half the ingredients if you’re looking to make a smaller batch.
Ingredients
3 cups wholewheat flour
2 tsp baking soda
1 cup maple syrup
1 1/2 cups aquafaba (liquid from canned chickpeas)
Juice of 2 lemons
2 tbs poppyseeds
Icing
1 cup raw cashews
1/4-1/2 cup maple syrup
1/4 cup coconut yogurt
Juice of 1 lemon
Preheat oven to 180 degrees C. Lightly oil a doughnut tin and set aside.
In a large bowl, mix together the flour and baking soda. Pour in the liquid ingredients and whisk together until smooth. Fold in the poppyseeds.
Pour the batter into the oiled doughnut pan and bake for 12 minutes. Doughnuts should have risen and feel slightly firm. Allow to cool before removing them from the tin.
In a high speed blender, blend together all the icing ingredients until smooth.
Once the doughnuts are fully cooled, remove them from the tin and dip them in the icing. Sprinkle with poppyseeds and serve.
