Lamington Bliss Balls

My decadent Lamington Bliss Balls are the perfect sweet treat to add to your week. They’re quick and easy to make and are perfect for on-the-go.

Ingredients

  • 1 cup dry dates, pitted

  • 1/2 cup almond meal

  • 1/2 cup coconut flakes, plus more for rolling

  • 3 tbs cacao powder

Place the dates in a heat-proof bowl and cover with hot water.

In a food processor, add the almond meal, coconut flakes and cacao powder and pulse until well combined.

Drain the water from the dates and add them to the food processor. Mix until a crumbly, yet sticky mixture forms.

Press the mixture into bit-sized balls and roll them in the remaining coconut flakes.

Store in an air-tight container for up to a week. Enjoy!
