Chocolate Zucchini Muffins
These choc zucchini muffins are a great way to sneak some veggies into your day. The best part is they taste a lot like chocolate and nothing like zucchini. They’re a win-win!
Ingredients
1 & 1/4 cup wholemeal flour
1/4 cup cacao powder
1 tsp baking powder
1/4 cup brown sugar
1 tbs flaxseed, ground
1 small zucchini, shredded (about 1.5 cups)
1 & 1/4 cup almond milk
1/2 cup chocolate chips
Method
Preheat oven to 180 degrees C.
Mix the flaxseed with 2 tbs of water and set aside.
In a large mixing bowl, combine the flour, cacao, baking powder and brown sugar. Add the flaxseed mixture and the almond milk and mix until a cake batter forms. Fold in the shredded zucchini and chocolate chips.
Spoon the mixture out into cupcake moulds and bake for 30 mins or until fully cooked through.
