Chickpea & Grain Salad
A light and refreshing salad that takes only a short time to prepare. My Chickpea & Grain Salad is loaded with protein, fibre & essential nutrients to keep your body nourished and happy.
Ingredients
3 cups Gut Friendly Mixed Grains, cooked (can sub with brown rice or quinoa)
1 cup tomato, diced
1 cup cucumber, diced
1 small red onion, diced
1 cup kale, chopped finely
1 handful parsley, chopped finely
1 tbs dried barberries (can sub with cranberries or raisins)
1/2 cup chickpeas, cooked
1 tbs tahini
Juice of half a lemon
Sea salt, to taste
In a large bowl combine everything but the tahini and lemon. In a smaller bowl, mix the tahini, lemon juice and a tablespoon of cold water until a runny paste forms. Add more or less water to get the desired consistency.
Pour the tahini dressing over the salad and mix well. Serve & enjoy!
