Baked Pears With Peanut Caramel
Warm baked pears and tangy coconut yogurt drizzled with my gooey peanut caramel. Sweet, comforting and decadent. This dish has it all.
Ingredients
1 bosc pear (green varieties work too)
Sprinkle of cinnamon
1 tbs coconut yogurt
1 tbs crushed pecans
Peanut Caramel
1 tbs smooth peanut butter
2-3 tbs maple syrup
Slice the pear in half and spoon out the seeds. Sprinkle with cinnamon and transfer to a lined baking tray. Bake at 220 degrees C for 20 minutes or until soft. Once cooked, allow to slightly cool.
Smear the coconut yogurt on a serving plate, add the pears and drizzle over the peanut caramel sauce. Garnish with crushed walnuts and enjoy. Best served immediately.
