Air-Fried Cassava Fries

Cassava is a root vegetable native to South America. It has a mild, earthy and nutty taste with a texture similar to potato.

Cassava fries are golden and crispy on the outside and tender on the inside. They’re a bit more fibrous than potato fries yet a whole lot more tasty.

If you can’t find the starchy root fresh, you’ll likely be able to locate it frozen in specialty supermarkets.

Ingredients

  • 4 cups cassava

  • 1/2 tbs garlic powder

  • 1/2 tsp oregano

  • 1-3 tsp olive oil

  • A pinch of salt

Boil the cassava until tender. Once cooked, drain and cut into thick wedges.

Drizzle over the olive oil and the spices. Mix through until the cassava is well covered.

Air fry at 200 degrees C for 12 minutes, making sure to flip the fries half way through.

Serve with your favourite dip and enjoy!
