Raspberry Banana Bread
Banana bread is one of the simplest and easiest treats you can make. It’s extremely versatile and does well with various flavour combos. My Raspberry Banana Bread tastes sweet and tangy all at the same time with a little hint of crunch from the crushed walnuts.
Like all my recipes, it’s a healthier alternative to most sweets, so you can indulge without feeling guilty.
Ingredients
2 large ripe bananas
1 tbs ground flaxseed
1/4 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
1 cup wholewheat flour
1 cup raspberries, fresh or frozen
1/4 cup crushed walnuts
1/4 cup almond milk or plant-based milk
Preheat oven to 180 degrees C.
In a large mixing bowl, mash the banana and mix in the flaxseed, vanilla extract and cinnamon.
Fold in the baking soda and wholewheat flour. Gradually pour in the almond milk until a thick batter forms.
Mix in the raspberries and walnuts.
Line a loaf tin with baking paper and pour in the batter.
Bake for 45-50mins until a pin comes out clean when inserted in the middle of the loaf.
Allow to cool before serving. Enjoy!
