Forest Berry Loaf Cake
Deliciously sweet, soft and fresh - bake up a treat for your next afternoon tea with my Forest Berry Loaf Cake.
Ingredients
1 tbs ground flaxseed + 2 tbs water
1 cup self-rising wholemeal flour
1/4 cup raw sugar
1 tsp vanilla bean paste
3/4 cups plant milk
1 cup mixed berries (I used blueberries, raspberries and blackberries)
Preheat the oven to 180 degrees C.
In a small bowl, combine the flaxseed and water and let thicken.
In a large mixing bowl, combine the flour and sugar. Pour in the flaxseed mixture, vanilla bean paste and milk. Mix until a smooth batter forms. Fold in the mixed berries.
Transfer to a lined loaf dish and bake for 35 minutes.
Allow to cool before slicing. Enjoy!
