Cacao & Prune Brownies

Inspired by a grand vegan cafe I stumbled across while in Singapore, these brownies are rich, dense and moist. They’re high in vitamins and minerals and, thanks to the prunes, aid in digestion. The perfect guilt-free treat!

Ingredients

  • 1 1/2 cup wholemeal flour

  • 1/2 cup cacao powder

  • 4 tbs maple syrup

  • 1 cup pitted prunes

  • 1 cup plant-based milk

  • 1/4 cup 90% dark chocolate

Preheat oven to 180 degrees C.

To a food processor, add the flour and cacao powder and blitz until well combined. Throw in the maple syrup, prunes and milk and blend until a sticky batter forms.

Add in the dark chocolate and pulse until mixed through, making sure to leave some small chunks.

Pour the mixture into a lined square baking pan and bake for 30mins or until a pin comes out clean when inserted in the middle of the dish.

Allow to cool before removing from the pan and place on a cooling rack to fully cool.

Once cool, cut into even slices. Enjoy!
